Green Queen Bowl

 

This bowl is something that I make in advance on a Sunday. Often I end up skipping all vegetables until dinner because of their prep time, and honestly a sandwich just feels easier. I tend to cook in bulk and make this bowl throughout the week for a hit of vege goodness at lunchtime and the portions of each ingredient are just how many I eat at a time.

This grain free bowl is filled with immune boosting goodness, what I love about it is the variation of ingredients, a little bit of everything. This is super important for a healthy microbiome and immune system. After doing elemental diets to heal my body I now try to include as much variation as possible in my cooking. You can also throw in some paprika roasted cauliflowers, ghee roasted pumpkin or steamed artichokes!

INGREDIENTS

  • Β½ avocado

  • 1 Zucchini

  • Handful Rocket

  • 6-8 small Brussel sprouts

  • 3 stems Broccolini

  • 6 Sugar snap peas

  • 2 Eggs (optional) Vegan option, tofu or falafel

  • 1 tablespoon Sauerkraut (optional) alternative, hummus

  • ΒΌ Lemon

  • Hemp seeds

  • Sesame seeds

RECIPE

  1. Peel, slice and de-seed the zucchini, I find this best for my digestion, remove strings from beans and leave whole. Add the two to a wok with a teaspoon of coconut oil.

  2. Halve Brussel sprouts and place on a baking tray, drizzle with melted coconut oil and paprika. Pinch of salt. Roast in the oven at 180 degrees until soft and golden brown. 

  3. Add Broccolini to the tray in the oven after 10 minutes with coconut oil, lemon and salt.

  4. Cook Zucchini and string beans until charred but still holding shape.

  5. Boil 2 eggs.

  6. Add rocket to the side of your favourite bowl, vegetables on the other side, slice half an avocado, add sauerkraut, 2 halved eggs and sprinkle with sesame, hemp and salt.

  7. Drizzle of olive oil.

  8. To make this as a share plate just doubled the recipe.


CANDIDA-FRIENDLY OPTION

Remove sauerkraut

LOW FODMAP OPTION

Replace sugar snap peas with bok choy. ΒΌ Avocado, add some tofu or goat’s cheese instead.
